Born in a small town in the state of Jalisco, Mexico, Jorge started cooking in his mother’s kitchen at the age of 9. His great grandmother, however, was the one who inspired him as she worked in her wood fired kitchen and taught him about preserving all kinds of foods. When Jorge moved to the Napa Valley, the beauty and bounty pushed him to pursue a career in the kitchen. He has been cooking in the valley for over 13 years, under magnificent Chefs who saw a sparkle in him and taught him the ropes. He specializes in Italian cuisine, with pasta being his favorite thing to make on his day off.

Jorge is passionate about cooking and the ingredients and resources in his dishes. He loves to cook for his three year old son, Roads, who has become his tester for new dishes. They both live in Yountville.
